Vaughn's Penne with Carrots and Chevre

PENNE WITH CARROTS AND CHEVRE
 
6 tablespoons of olive oil
10 oz carrots peel, cut crosswise into thin slices
Fennel
1 lb Penne pasta
1 Tablespoon Italian parsley
6 oz Chevre (goat cheese)
 
Saute carrots with fennel, salt & pepper
Cook the pasta then add it to the carrots and cook
Add crumbled Chevre and parsley toss and serve.
